At Eleology, our work begins long before a bottle the table.
It begins in the olive grove — with the soil, the trees and the people who care for them. The way the land is cultivated, how natural resources are managed and how each producer chooses to protect the future of the grove: these everyday decisions shape not only the quality of the olive fruit, but also the future of the land itself.
Sustainability, for us, is not just a message. It is a way of working. It guides the relationships we build with producers, the practices we support in the field and the long-term future we want to help create for organic olive cultivation in Greece.
Through Eleology ORG, we fund and coordinate a dedicated training program in organic olive cultivation, offered to participating producers at no cost.
Our goal is to contribute to the development of organic cultivation by giving producers access to knowledge, practical tools and modern farming methods. We want to support the people at the very beginning of the organic extra virgin olive oil value chain, helping sustainability become not just an aspiration, but a daily practice in the olive grove.
The program is carried out in collaboration with the American Farm School, an educational institution with deep expertise in agricultural education and sustainable rural development. This collaboration brings the program a strong scientific foundation, a practical perspective and the credibility needed when addressing the future of olive cultivation.
Structured as a 40-hour training program, it covers a wide range of topics directly connected to the future of olive farming: organic olive cultivation, regenerative agriculture, soil and nutrient management, water management, biodiversity, organic pest and disease management, certification, economic sustainability, modern technologies and adaptation to climate change.
These topics reflect a belief that lies at the heart of Eleology ORG: the future of Greek organic extra virgin olive oil must be built on tradition, scientific knowledge and modern agricultural practice working together.
At the center of the program is the soil — the foundation of every healthy olive grove. Producers are trained in practices that improve soil fertility, including composting, organic matter management, green manure and cover crops. They learn how caring for the soil can help reduce erosion, support biodiversity and make the olive grove more resilient.
Water management is another essential part of the training. As climate change increasingly affects agriculture, efficient irrigation and the soil’s ability to retain water are becoming critical to the long-term sustainability of cultivation.
The program also focuses on olive tree management, pruning, the use of pruning by-products and the enhancement of biodiversity within the grove. Producers are also trained in organic pest and disease management, the organic certification process, and the economic aspects of organic cultivation.
Modern technologies also play an important role. Tools that help monitor soil and tree health, record cultivation practices, and support precision agriculture can enable producers to make better, more informed decisions for their groves.
This initiative is not a one-off training program. It is part of Eleology’s long-term strategy through Eleology ORG: to support the growth of organic cultivation by empowering producers with knowledge, practical tools, and access to modern farming methods.
For us, the future of Greek organic extra virgin olive oil is shaped in the olive grove through the choices, care and expertise of the people who cultivate it. By investing in their education, we invest in a more sustainable, more resilient and higher-quality future for the entire value chain.
A future that begins with the land.
And with the people who care for it.
